Graphics don't bother me, it's gameplay that counts, so the HD aspect is neither here nor there for me. But, I think remakes of Way of the Samurai 1 and 2 on the Way of the Samurai 3 engine, with the character customization system (buying clothes and haircuts in shops etc), side-jobs, and fishing system of Way of the Samurai 4, would be an interesting experience.
Bonus points if they release them on PC and make them mod friendly.
